The Chef's Room fish and cookery school is a state-of-the-art teaching facility at Vin Sullivan's in Blaenavon. Experienced food writer and teacher Lindy Wildsmith hosts a varied programme of cookery classes in conjunction with wellknown consultant chef Franco Taruschio OBE - founder of the famous Walnut Tree Inn. Lindy, Franco and other guest chefs teach small groups of enthusiasts in a series of relaxed, informative and fun lessons. Themes vary from the ever-popular seasonal Italian classes and 'basic fish and seafood skills', to a 'pasta master class', 'Welsh Italian fusion', 'simple suppers' and 'curing'. Guest French and Thai chefs offer knife skills, contemporary bistro and hot-wok menus. Vin Sullivan is a major supplier of fresh fish to the catering industry and, as such, fish-based classes benefit from not only top-notch produce but also a world-class fishmonger demonstration.
