Senior kitchen manager and guardian of the menu, Lee Williams, has been with Thomas since day one. Lee has worked in a number of prestigious locations including Buckingham Palace, and his passion is for the delivery of great local ingredients in a manner that will surprise and please even the most demanding of guests. He works closely with local and national suppliers to give the menus at Thomas the kind of exciting twist that you might not find in other hotel restaurants. With Lee's work at sister restaurants in Plymouth and Bristol, he has successfully influenced the shape of the menus across all restaurants in the group, bringing interest and variety to a menu designed to suit all tastes and needs.
Lee's signature dishes would have to include lamb shank, romeiro prawns and the famous (or infamous, if you have a regard for your waistline) dessert platter. The tradition of Sunday lunch is alive and well at Thomas. The fresh roast meat platter with all the trimmings is delivered to your table for you to enjoy. More trimmings are always available at no extra cost, and if you buy a platter for four people, you get either a starter or dessert platter for free.
