The Kingsknowes Hotel stands in four acres of gardens above the River Tweed on the outskirts of Galashiels. The hotel is a Scots baronial mansion built for a textile magnate in 1865 and retains its original architectural features including ornate plaster cornicing, huge marble fireplaces and sparkling chandeliers.

The hotel has an impressive hallway with a flamboyant arched colonnade and a grand staircase leading to the 12 individually furnished bedrooms. Off the hall to the right is the wood-panelled Four Seasons cocktail bar, while to the left are two dining rooms, which, when not being used for dinner or private celebrations can double up as conference facilities. At the end of the hall is the magnificent Victorian cast-iron glasshouse that serves as The Conservatory Restaurant; this is surely the most romantic dining room in the Borders with its rambling grapevines, stunning views and equally magnificent food. However during the winter (when we visited) it is the Courtyard Bar that forms the heart of the hotel.

The bar menu offers timeless classics as well as innovative dishes to appeal to the more adventurous palate. The crisp Caesar salad with crunchy croutons and shavings of fresh Parmesan was fantastic. The delicious chicken liver parfait was a perfect balance of smooth texture and rich flavour, beautifully presented with a colourful salad garnish and complemented by fruity Cumberland sauce and balsamic glaze. The game casserole with its rich flavour and succulent chunks of venison was a delight - top marks to the chef for the fantastic mash as well. The local influence of full-flavoured black pudding adds another dimension to this satisfying dish. The pan-seared halibut, imaginatively served with a crisp mango chutney tart and banana fritter was an unprecedented success; a medley of vegetables including silver-skin onions, pak choi and tender chanterelle carrots accompanied both meals. The dessert menu provides a mouth-watering selection of delicious homemade treats, including cappuccino creme brûlée and Bailey's cheesecake. Proprietors Ian and Jenny are to be congratulated on the high standards of their food and the charming ambience of this delightful family-run hotel.
