For mains, expect to fi nd traditional Scottish dishes with contemporary variations, such as rabbit and pancetta ballotine with rabbit haggis, wild garlic gnocchi, carrots and star anise. For those who fancy something from the ocean, the sea bass with smoked mussels, oyster mayonnaise, edamame beans and sweet potato is a delightful dish.
