The Roxburghe Hotel sits amidst the splendour of the Georgian New Town, rather like a grand duchess of the period standing guard over her domain. Completed in 1820, the building is an outstanding example of architect Robert Adam's work. While the façade is preserved in its original form, the interior has been sensitively adapted, now lending itself to modern-day life. Nearing the end of a £7.5 million refurbishment, the hotel certainly has the look and feel of a premier four-star establishment that caters for every taste. A large part of that is, of course, the wining and dining experience - and if our visit was anything to go by, I suspect management must be very happy indeed. The Melrose Restaurant is a light, airy space with tables well spaced to prevent the hemmed-in feeling diners loathe. The menu is divided into two with an à la carte section packed with tempting choices to suit most palates; vegetarians are well looked after too.

I kicked off the evening with a blue cheese parfait, delicately seasoned and a most wonderful match for the cinnamon-scented apple jelly served alongside. My dining partner dived straight into the mains, and supped on a substantial serving of roast loin of sweet, pink lamb, paired with a creamy gratin and seasonal vegetables. I continued with a lightly baked, meaty fillet of halibut, drizzled with a wild mushroom butter sauce that simply burst with flavour. It left me so satisfied that I didn't have space for dessert, despite longing to try the truly scrumptious-looking brioche bread and butter pudding being enjoyed across the table.

A special mention must go to the waiting staff, who go the extra mile in order to make everyone feel welcome. With great food, beautiful surroundings and first-class attention to detail, it is satisfying to know that Charlotte Square has lost nothing of its grandeur.
