The Balmoral’s Michelin-starred restaurant, Number One, is recognised as providing one of Scotland’s greatest culinary experiences. Gaining four AA rosettes for culinary excellence in 2016/2017, it is Number One’s dedication and passion to ensure immaculate service and outstanding Scottish cuisine that gives this culinary Edinburgh landmark its winning edge. This year, The Balmoral’s executive chef, Jeff Bland, head chef, Brian Grigor, and the front-of-house team have deservedly retained their Michelin star for the 15th consecutive year and pride themselves on preparing perfect dishes.

Head chef Brian Grigor places emphasis on creative dishes while promoting the best of Scotland by using only the finest and freshest Scottish ingredients and produce. Featured dishes include Balmoral smoked salmon with lemon butter, quail’s egg and caviar; Inverurie hogget with baby gem, peas and mint yoghurt; Valrhona chocolate tart 2001 with praline and white chocolate.

The restaurant unveiled an elegant new look in 2015 following a £200,000 refurbishment. High-quality craftsmanship by local artists and builders, who share a passion for attention to detail, has ensured that the new-look Number One offers fresh, contemporary style while maintaining the warm and inviting atmosphere that guests have enjoyed since the restaurant opened in 1997. Stand-out design elements include striking dove grey wool banquettes with golden yellow leather accents, elegant Lyndon Albany chairs with distinctive button backs and solid timber oak flooring throughout the restaurant. Art is at the centre of the restaurant, with a large format triptych print of a Scottish oak tree by Adam Ellis complementing the artwork from the Royal College of Art in London, which hangs on the rich red lacquered walls.

The spacious and comfortable surroundings at Number One create a sophisticated ambience, and the knowledgeable team – including restaurant director Gary Quinn and deputy manager Emma Lonie – ensure a truly memorable dining experience.

The bar and lounge area at Number One is the perfect place to relax and enjoy a drink while perusing the menu. The sommelier will be on-hand to suggest the perfect pairing for each dish from an extensive list of carefully selected wines and Champagnes.
