Kyloe Restaurant & Grill in Edinburgh's West End is the ultimate restaurant for steak lovers. Everything about this chic, attractive eatery is a tribute to the cow. Even its name is an old Scottish word for Highland beef cattle, and its stylish decor, complete with cowhide seating, provides the perfect backdrop for a meaty feast.

Only the best produce makes it into Kyloe's kitchen, including cuts of pedigree Aberdeen Angus sourced from some of Scotland's most highly renowned farms. Award-winning head chef David Haetzman's enthusiasm for top-quality ingredients is evident in every dish, and as well as being friendly and eager
to please, the waiting staff are extremely knowledgeable about the different cuts on offer. The wine list is as thoughtfully put together as the à la carte, and includes Kyloe's signature wine, Angus the Bull, a South Australian cabernet sauvignon.

While waiting for our starters, we were given a small but perfectly formed loaf of freshly baked bread, along with sea-salted butter and a tomato, carrot and coriander dip. I then tucked into wonderfully delicate cured salmon, beetroot salad and herb creme fraiche, which was beautifully presented and tasted every bit as good as it looked. My dining companion, meanwhile, enjoyed a luxurious and perfectly balanced steak tartare with shallots, cornichons and parsley, topped with egg yolk and served with game chips.

For mains, we opted for a sharing cut of sirloin on the bone with a piquant chipotle chilli, smoked paprika and cumin dry rub, which enhanced the deep, rich and buttery flavour of the melt-in-the-mouth steak. We also ordered sides of green beans with garlic and chilli, and a portion of mouth-watering beef-dripping chips that were crisp on the outside and fluffy in the middle.

We just about had room for a dessert of milk chocolate pavé with roasted pine nut ice cream; the ice cream was an inspired touch, adding an irresistibly nutty, savoury edge to the creamy chocolate pavé. With luxurious offerings like this on the menu, it's no wonder Kyloe Restaurant & Grill is a much-talked-about addition to the Edinburgh dining scene
