Some places just get it right. You can tell from the moment you walk through the door that an evening spent at The Honours is going to be special. For us, this feeling was affirmed as we took our seats in the dining area and our experience began.

The most recent addition to the Martin Wishart dynasty, The Honours opened its doors to discerning Edinburgh residents last year. In a short space of time, the restaurant has earned itself a stellar reputation in the city and beyond, partly due to fantastic head chef Paul Tamburrini's top-quality menu, which showcases the best local and sustainable produce.

Found just off the city's fashionable George Street, the venue could not be better situated. The atmospheric bar area is the ideal place to sip on a glass of pre-dinner Champagne before stationing yourself in the smart dining area. Typically Georgian in terms of architecture, yet every bit the 21st-Century eatery, its contemporary interior beautifully complements the neo-classical design.

The menu is well balanced, with something for every palate - including unique choices such as crab cappuccino and veal sweetbreads. It's clear that no compromises are made on quality here. We began with a selection of the finest Continental charcuterie and fluffy potato gnocchi with brown butter, wilted sage and Parmesan. The stand-out dish of the evening for me was a lovingly prepared main of lamb tagine with merguez sausage, speckled with almonds - its spicy couscous accompaniment was far removed from the ordinary side orders we might have expected. My companion chose succulent confit duck leg with orange and pommes sarladaise. There were culinary fireworks to finish, in the form of mango soufflé du jour and warm pistachio cake with blood orange sorbet.

Throughout the night, the waiting staff were entirely professional and knowledgeable advocates of their trade. Making well-informed food and wine recommendations and answering our questions about the cooking methods employed and the provenance of the produce without hesitation, they were a joy to engage with.

Having rightly claimed its place as one of Edinburgh's ultimate eateries, The Honours continues to create a memorable experience for each of its diners. Long may this establishment raise the bar for eating out in this fair city.
