Chop Chop serves north-eastern Chinese cuisine, which is very different from the Chinese dishes normally found in the UK. Though food from this region is highly regarded in China, it is virtually unknown elsewhere. Dongbei (north-eastern) dishes are characterised by their freshness and simplicity, being made with liberal use of coriander, ginger or garlic, with the flavour of the main ingredient prevailing over all else. No preservatives, additives, colourings or bought-in sauces are used. Diners are encouraged to order collectively and share dishes, in order to enjoy many taste sensations. This style is perfect for group dining and Chop Chop regularly attracts large parties, with a great buzz being generated by the excited chatter of happy diners.
