Alain Roux and his father, legendary chef and restaurateur Michel Roux, O.B.E., have partnered together to open the new Brasserie Prince at The Balmoral Hotel. Formally known as Hadrian’s Brasserie, this beautiful new restaurant offers quintessentially French flavours with the finest local Scottish ingredients. The centrepiece bar with a marble top serves quality spirits and wine that perfectly complement your food.
The menu changes regularly to reflect the bountiful seasonal produce that Scotland has to offer. To begin, you may opt for the Parisian gnocchi gratin with cheese pâté à choux and Béchamel sauce or the chicken quenelle with a morel mushroom sauce. These dishes use simple flavours in a complex way to produce high-end French cuisine. For your main, dive into fresh Dover sole meunière served on the bone with wild asparagus, or if you fancy meat try the roasted rack of lamb with a herb crust and white beans à la Portugaise. Throughout the week you will find specials, and there is also a dedicated raw bar that serves daily caught oysters, crab and Scottish salmon. Perhaps the pièce de résistance for Prince’s Brasserie is Michel and Alain Roux’s desserts. Alain is a Master Pâtissier of Relais Desserts, marking him as one of the world’s leading pastry chefs.
