For five years, China Red has been serving authentic Szechuan dishes that take inspiration from the heart of the Sichuan province in south west China, where local cooking makes use of fiery spices to help keep the chill of winter at bay.

Tucked away on a side street, China Red’s interior reveals subtle accents of red and gold, enhancing the smart Chinese-style decor. The excellent menu served here has always been tremendously popular with the city’s Chinese expats, but there is a warm welcome for everyone and more and more savvy locals are heading to China Red to enjoy Eastern cuisine with a delicious twist.

As we settled at a comfortable table for two, manager Kelvin pointed out some of the traditional Szechuan dishes such as lamb with cumin, the chef’s exceptional gong bao chicken and house specialities of poached beef, lamb or fish in hot chilli oil. The restaurant’s three chefs fl avour their culinary creations with a special house blend of 13 spices, incorporating legendary Szechuan peppercorns, cinnamon and star anise. The fi eriness of each dish is denoted by one, two or three chillies on the menu, but the team is happy to temper the spice level upon request, so nothing is off limits for those with an adventurous palate.

We chose the aforementioned signature dish of fi sh in hot chilli oil, which is gently cooked to give the fish a delicious buttery texture. Its delicate flavour was complemented by the heat of the chilli oil and some crunchy beansprouts. Alongside it, our fried fish with pepper and chilli was a perfect complement, with crispy chunks of fish in a light dry coating of spice. Braised aubergines came in a savoury, sticky sauce and were topped with ground pork, though like several other dishes they can be served without the pork on request to make it a delicious vegetarian dish.

Since expanding last year, the restaurant can seat 160 comfortably; there is a private dining area at the rear that’s ideal for private parties or meetings, while upstairs, the famous karaoke room is the ideal party venue.
