Inspired by the beach shacks and street hawkers of the Caribbean Islands, the authentic starters are great for sharing and grazing, and make the perfect accompaniment to a Passion Rum Punch, which comprises dark rum, Passoa, fresh passion fruit, orange juice and lemon. Start with jerk chicken wings, marinated for 24 hours and served with a choice of coconut jerk glaze or classic jerk glaze and sour orange chutney, or the hot pepper roti, a Trini-style dish of oven-baked roti stuffed with shredded cheese, carrots, potatoes and onion and served with a Scotch bonnet chilli and herb mayo. Mains include delicious one-pot dishes, such as curry goat and Trinidad curry chicken, simmered slowly and served with traditional rice and peas. The hearty jerk pit barbecue dishes are a triumph, and include the likes of double-dipped steak marinated in jerk seasoning, grilled to your liking, and served with green seasoning, sweet onion chutney and your choice of jerk glaze.

To accompany your meal, choose from a wide range of cocktails including the Marley Mojito: Appleton Special rum, green melon liqueur, fresh mint, watermelon and homemade ginger beer, and the Caribbean Pimm’s, with fresh mint, strawberries, cucumber, lime, ginger, orange and passion fruit.

For an authentic dessert try the barbecued pineapple, glazed with sugar and rum caramel sauce and served with coconut ice cream and coconut shavings, or the Caymanas rum cake with rum caramel and vanilla ice cream – a warm, comforting dessert to indulge a grown-up palate. Whatever you choose, you can guarantee it will be cooked to perfection and served with a smile.
