Judson's is an eatery with real flair, opportunely situated in the centre of this lovely market town. Enter its pleasingly quirky and intimate dining room - complete with elegant wooden tables and welcoming, well-informed staff - and select from the superb seasonal menu and daily specials. The first thing to notice is the use of local ingredients, including various vegetables, crab, pigeon and fish. The second is the appealing and imaginative approach to cuisine. There is admirable ambition evident in dishes such as escabeche and ballotine, and exciting new twists are given to established classics. The specials on our visit included a tasty starter of curried crab fritters with cucumber noodles, followed by an Applewood home-smoked rolled sirloin of beef with creamed thyme potatoes, wild mushrooms and truffle sauce. Both dishes were delightful, offering a myriad of robust and rich flavours. Seafood dishes included bream, hake and stone bass and vegetarians were well catered for with characterful dishes, such as fried basil gnocchi. All dishes were reasonably priced, especially considering the clear calibre of the ingredients - which was obvious as soon as they touched our lips. Take advantage of the concise yet wide-ranging wine list, and, if you have any room left for one of the fabulous desserts, try the fresh strawberry and frangipane tart, or a selection of Yorkshire cheeses.
