Nestled in England’s smallest city, The White Hart in Wells is where you’ll find Sadler’s Brasserie. The Sadler’s team greeted us with a warm welcome before we took a seat in a cosy corner and perused the wine list.

The restaurant has a comfortable ambience: the walls are adorned with beautiful art, with relaxing classical music and vintage French chairs lending a 1930s vibe. Head chef Matthew Briddon brings his wealth of culinary experience to the table to serve top-notch, British-inspired dishes that use seasonal ingredients, some of which come from the hotel’s own kitchen garden.

We were lucky enough to indulge in dishes from the evening menu. Every plate arrived immaculately presented and looking almost too good to eat. We kicked off with crispy calamari salad with homemade harissa dressing, and hay-smoked salmon with cucumber sauce, herb cream cheese and a homemade bagel that left us eager for more. Next came the slow-cooked belly pork with baby carrots, mash, cider jus and Bramley apple sauce, while my partner chose steak frites with mixed leaf Parmesan salad and homemade Béarnaise sauce. To finish, we tucked into a steaming hot, seasonal English fruit crumble.

As we rounded off our evening with a brandy coffee, we soaked up the surroundings of this diner’s delight.
