Schpoons & Forx restaurant and LEVEL8IGHT The Sky Bar offer two unique experiences at the new Hilton Bournemouth. Attention to detail is paramount here, and you’ll see it in everything from the beautifully crafted dishes and bespoke cutlery, to the attentive service that ensures all needs are catered to.

Schpoons & Forx takes the formality out of formal dining, offering a refreshingly relaxed atmosphere in a restaurant that is all about the ambience. Diners are encouraged to sample tapas dishes as they browse the menu, or share a range of main dishes between larger groups, while the open kitchen, complete with a tandoor oven, provides a bustling backdrop to the restaurant floor. Celebrity chef Matt Tebbutt runs the restaurant, and often stops by.

It would be difficult to beat the beer-battered monkfish starter I enjoyed. The monkfish cheeks arrived in a beautifully light tempura-style batter, a new take on the classic scampi dish. For my main course, the marinated rump of lamb with flatbread, pomegranate and minted yoghurt dressing was a delightful combination of fresh flavours and crisp textures. To finish, the Cambridge burnt cream with honeycomb, pistachio and raspberry was a real treat for any fan of crème brûlée, and every mouthful proved a complex medley of subtle flavours.

A visit here isn’t complete without a trip up to the LEVEL8IGHT The Sky Bar, the highest bar in the South West, which specialises in cocktails and Champagne. The view across Bournemouth is simply breathtaking, and the balcony seating area is a superb spot in which to sit back with a cocktail or two. The bartenders have personally designed the extensive cocktail menu, using local produce and creating twists on classics alongside original concoctions. The Japanese Sika is an unusual combination of bourbon and Japanese tea syrup, with a strong papaya flavour. The bartenders are happy to deliver new creations, and met my penchant for a non-alcoholic, coffee-based drink by delivering a creamy dessert mocktail.

The fine dining element of this establishment is refl ected in the premium quality of the service. Schpoons & Forx and LEVEL8IGHT The Sky Bar are vibrant establishments full of character, passionate staff and outstanding food.
