There's no denying that hunting and foraging are age-old skills which are rarely practised in our modern lives. Yet in this day and age it all seems strangely relevant and bang on trend once again. Mike Robinson's cookery school will definitely appeal to those who have an interest in hunting - but it is equally relevant for anyone who has a passion for good, honest cooking using traditional methods.

We were a mixed group of nine people on the Sunday I attended, and were all encouraged by Mike (who is a regular presenter on ITV's Countrywise) to step outside our comfort zones. The morning began with the preparation of the meat, starting with skinning a rabbit and de-breasting a pheasant. The rest of the day was given over to the preparation of a meal of magnificent proportions, reminiscent of a medieval banquet. By the end of the day, the table was groaning with pheasant goulash, wild venison stew, confit of rabbit combined into a perfect lasagne, and a pavé of wild venison with a soy sauce and maple syrup marinade.

But there were so many more benefits from the day: insights into how professional chefs use their knives, the secrets of making perfect roast potatoes, and a demonstration on how to make a fabulous Béchamel sauce. We laughed lots and learned lots, enjoying some outstanding food along the way
