General manager Alison Oliver and her staff run The Swan like a well-oiled machine; the timing between courses was perfect. We didn't have to wait long for our starters and there was just enough time to pause before our delicious main courses arrived. My guest, a vegetarian and particular about her food, chose from the pretty summer menu, and was rewarded with roasted flat mushrooms with Cropwell Bishop Stilton and spinach, followed by baked red pepper stuffed with courgette, butter beans, pesto and a tomato passata dressing, and creamy vanilla ice cream to finish. Her clean plate and lack of conversation was proof enough of the enjoyment.
You'll find plenty of freshly prepared classic pub dishes on the menu including slow-cooked shoulder of lamb, royal bream with sugar snap peas and a lime butter - which I chose and enjoyed with much enthusiasm - or try the homemade pie of the day with wholegrain mustard mash. If you're looking for a nice tipple to accompany your meal I can't recommend the George Kinross cabernet shiraz merlot from South Africa enough - delicious and conveniently available by the glass; or try a bottle of the specially-selected excellent value house claret.
At the top of the High Street, on the way out of Woburn Sands towards Woburn, The Swan is just minutes away from Junction 14 of the M1, close to Milton Keynes and not far from Woburn Safari Park.
