At nine weeks old, one9seven is the baby of an ever-expanding selection of East Sussex restaurants, yet it already stands head and shoulders above the rest. Stuart Ferguson has created a menu so magical that I almost expected to see him wearing wizard's robes rather than chef's whites.

It was no surprise to learn that he has spent time at El Bulli, acclaimed to be the best restaurant in the world, nor that he has rubbed shoulders with Heston Blumenthal. With his experience, passion for local produce, desire for no rules or pretensions, and veritable supply of talent, Stuart has created what most restaurateurs can only dream of: fun, accessible fine dining.

It seemed a shame to attack our artistically presented starters but it remained impossible to resist. The seasonal ingredients are treated with such respect by Stuart's team that the simplest asparagus spear can be elevated to heavenly status and the alchemy used to cook eggs is enough to put Delia out of publication. Could the main courses live up to such a stunning prologue' I cynically reserved judgement on the 'cider air' which sat atop my companion's pork cheeks, assuming such accompaniments are merely chef affectations. I could not have been more wrong. Every tiny bubble delivered the perfect intensity of complementary flavour - a genius alternative to thick, heavy sauces which often stifle such succulent meat. My locally landed mackerel with roast cauliflower was truly astounding and even now I remain unable to find the words to describe the chips which rendered us speechless with delight. Needless to say the desserts followed suit - my chocolate torte was a delicious contradiction of intense flavour and light texture. This is a meal I will remember for a long time to come.

What is truly miraculous is that Stuart has managed to keep this incredible dining experience affordable for all purses. With breakfasts from £2, light bites from £4.95, main courses from £9.95 and an imaginative children's menu, this Lewesian gem will not stay hidden for long.
