Horsham’s East Street has long been a destination for diners due to its large selection of eateries, and Wabi certainly stands out from the crowd with an unmissable corner location. Downstairs, the open-plan cocktail bar is vibrant and lively, while upstairs the dedicated dining area continues the fast-paced feel with attentive table staff continually on the move supplying multiple courses.

Wabi takes on the challenge of recreating the complex flavours of Japanese cuisine and has an extensive range of dishes. A comprehensive tasting menu is available for those who want to sample the wide range on offer, but for those who already know what they like, a spread of five or six courses to share gives plenty of opportunity to indulge.

We began with oshinko pickles, a colourful selection that set the scene with tangy sweet and sour flavours. Roast duck breast buns with aka miso followed, the pancake-like dough providing a comforting wrapping for the spicy duck, while slow-roasted pork belly squares on Korean miso came with a perfectly contrasting topping of apple relish. The most popular dish with regulars, Dragon Roll with prawn tempura, unagi, avocado, and wasabi mayo, was a masterpiece of food theatre, as hot water added to the wooden box set off a dramatic flow of dry ice. Wabi’s cocktails are spectacular, and there’s a good choice of wine and beer as well as an impressive list of sakes.
