A huge amount of care and attention has gone in to every component of each dish, and vegan diners are not forgotten, with a flavoursome chilli-infused tofu dish served with aubergine caviar, baby carrots, broccoli and squash purée. On the dessert menu, the chocolate bavarois terrine with crème fraîche sorbet and sugar crystals is difficult to resist. However, the passion fruit cheesecake with caramelised citrus segments and raspberry coulis makes for the perfect tangy end to an indulgent meal.
