Park Room Restaurant
The Park Room Restaurant is Guildford College’s student-led restaurant, which gives young people the opportunity to gain experience in a professional kitchen. For one of their regular Thursday evening special menus – fish night in this instance – the students dressed the tables with beach treasures and played a show reel of deep-sea fish as we perused the menus, which included some of their plans for presentation of the dishes, providing a rare and thoughtful insight.
In partnership with The Seafood School at Billingsgate, the students created an exciting menu of locally sourced treats. We started with sumptuous pan-fried langoustines complemented by pickled carrots, crab croquette and beetroot purée. Next came a delicate pea and mint soup with poached scallops, quail’s eggs and a crisp Parmesan tuile. The main course consisted of roasted sea bass served with a potato terrine, lemongrass consommé and grilled asparagus – it was a very well-executed dish with a superb combination of flavours and textures. Our dessert of chocolate delice with dried summer berries, Italian meringue and Champagne sorbet was a classically inspired sensation that rounded off an enjoyable supper.
The Park Room welcomes those who would like to reserve a group meal, be it for a society or club, or a special family occasion, and all dietary requirements can be accommodated with prior notice.
