Watermark menus represent the kitchen team’s enticing take on modern European fare and showcase an impressive use of local produce. Start with a sharer of oven-baked Camembert served with crusty bread and tangy onion chutney, and continue the spirit of sharing through to mains with a princely oceanic platter of king prawns, squid, mussels, salmon and cod in white wine and garlic sauce with new potatoes and salad, for two to share. If you’d rather keep your dish to yourself, you might prefer to begin with smoked duck with pickled fennel and blueberries, followed by lemon-marinated rack of lamb accompanied by spring onion mashed potato and balsamic jus.
