Placing an emphasis on local, seasonal food and drink, JSW – named after chef-proprietor Jake Saul Watkins – is a contemporary dining establishment situated in Petersfield, in the heart of the South Downs National Park. A former 17th-century coaching inn bearing all the hallmarks of the era – exposed wooden beams, a well, a cellar and tunnels to outlying buildings – JSW’s period backdrop has been overlaid with simply styled, elegant interior design elements and modern comforts, establishing an environment that is sophisticated. The aforementioned cellar is now stocked with a world-class collection of wine spanning 900 varieties at the latest count, and the dining room has been imbued with an informal, unaffected ambience, punctuated by thought-provoking pieces of art mounted on neutral-toned walls. Ingredient-led, the food offering at JSW is balanced and self-assured. The team of young, passionate chefs – led by Jake – aims to alter the produce they work with as little as possible. JSW has accounted for an increasingly food-cognisant client base by making use of local ingredients as widely as possible, while never compromising on quality when a better product can be sourced from a little further afield. Service at JSW is second to none and informed staff will gladly guide guests through the menu, offer recommendations and relay information about the ingredients and the wines that best complement a given dish.
