Irmantas, the talented head chef, specialises in refined modern Lithuanian cuisine, from potato pancakes topped with finest smoked salmon and homemade tzatziki, to mouth-wateringly tender lamb racks with goat's cheese, fresh roasted root vegetables, potato gratin and a drizzling of plum and red wine jus. All ingredients are locally sourced and Gintas, the manager, plans to soon be serving up his own organic garden produce. With such delicious dishes on offer, it's well worth choosing the taster menu. Its distinct flavours, together with the unique decor, bring the heritage of the Baltic states to Bordon. An excellent selection of wines is on offer to accompany your meal, as well as a vast array of Lithuanian vodkas and ciders. These can also be enjoyed in the rustic Lounge Bar, with its grand fireplace, piano and magnificent views. Dining at Headley Park is an experience nobody should miss out on.
