Nestled in a medieval village, The Dog at Wingham is a modern masterpiece. Welcoming, warm and relaxed, The Dog draws you into a dining experience not to be missed. Leaded windows and exposed beams belie the presence of a young and creative team in the kitchen. The menu is far from the usual pub fare – locally sourced fresh fish and game are complemented by a wide selection of accompaniments. Starters included pressed chicken and chorizo terrine with paprika crackling; braised ox cheek with cauliflower purée; and smoked haddock velouté with a poached egg, which was as light as air, deeply savoury and as satisfying an introduction to a meal as you could dream of. My personal favourite starter of carrots served five ways, which comprised honey-roasted carrots enhanced by purée, oil, crisps and carrot tops, demonstrates the imagination of the chefs and a sustainable ethos. Main courses such as sous-vide pork fillet with crispy pig’s cheek, venison loin with braised shoulder and roasted rack of lamb are made using meat from Kent farms. The game is sourced from barely five miles away and this really does have an impact on the flavour. Pan-seared chalk stream trout served atop soft herb risotto with smoked mussels and pancetta was irresistible. Vegetarians are treated to caramelised onion and blue cheese suet pudding accompanied by roasted red cabbage, a dish that would entice even the most ardent of meat-eaters. A fellow diner remarked that they didn’t want the meal to end – a testament to the quality of the food and presentation. Puddings are a harmony of delicious flavours – the treacle tart paired with blood orange sorbet was an impressive balance of sweet and tart. A fine selection of dessert wine and Port is available to conclude your meal with options served by the glass or bottle. The staff are warm, friendly and knowledgeable, the service is excellent and the atmosphere relaxed. Large parties and special events can be hosted in the spacious conservatory area and paved, walled garden. The Dog also offers overnight accommodation; what better way to end a wonderful meal than to sink into a comfy, freshly made bed?
