Having already built a solid reputation for quality, fresh food at Whites Bar & Kitchen in nearby Steyning, the White family's latest venture involves relaunching another listed building. The Swan in the village of Fittleworth is a tremendous example of a traditional English inn, with low-beamed ceilings, open fireplaces and a lineage dating back to the 14th Century.

Alex White's passion matches the high standard of his dishes - a standard that would be hard to match. My starter of butternut squash soup served with Welsh rarebit was delicious; the flavours were perfectly matched, the tangy mustard and cheese complementing the smooth, creamy soup beautifully. On the other side of the table, the honey-glazed goat's cheese with redcurrants, dandelion and watercress salad was testament to the chef's skill and expertise. The Swan's à la carte menu is small enough so as not to overwhelm, yet large enough to cater for a range of tastes and showcase an array of locally sourced produce. On the evening I visited, the specials included a whole plaice accompanied by fat chips, and a salad so fresh it might have been plucked from the ground moments before. The cider-infused roast pork belly with spiced apples, wild garlic and sautéed potatoes left my companion unable to utter a single word, such was her contentment. Needless to say, there was not a morsel left on the plate.

Desserts - such as blackcurrant jelly with honeycomb ice cream, Calvados syllabub and English shortbread - were as delicious as they were imaginative, and as you would expect there is an expertly designed wine list. The White's team only took on The Swan in early 2010, but already it seems they're onto something great. With plans for further renovation in the pipeline, 15 bedrooms available for bed and breakfast, and such a talented chef on board, The Swan is definitely one to watch. I, for one, will be paying them another visit very soon.
