For many years the Seven Dials district of Brighton has been a hot-spot for good-quality local restaurants, highlighting a number of cultures and cuisines. With this in mind, it's a great testament to the quality of recent arrival Thai Pad Thai that it was filled to capacity on a midweek night within only a few months of opening.

The first thing you'll notice is the care that has obviously gone into the decoration and presentation of the restaurant. Eschewing the usual cliches, the setting is contemporary and relaxed, the design featuring clean lines with no fuss or frills, and the resulting atmosphere is both friendly and welcoming. Much of the latter is due to owner Maz Elly, whose genuine enthusiasm for the food he serves is matched only by his passionate desire for customers to have an enjoyable dining experience.

The food is indeed something to be proud of; all the classics are present and correct - chicken satay served with a wonderfully tangy peanut sauce, deep-fried prawns coated in a particularly light and crispy batter and duck spring rolls accompanied by a delightfully subtle plum sauce. Mains like the restaurant's namesake pad Thai are excellent examples of real Thai cooking, packing a spicy punch but light on the palate. The menu's seafood dishes truly shine, featuring the likes of deep-fried salmon fillets and steamed sea bass - delicate and delicious. Alongside a carefully chosen selection of imported beers and a decently priced wine list, you have the additional option of taking your own choice of alcohol with you. Further proving that the customer is king, the full menu is available to take away and a delivery service is available in the local area. Buffet night on Tuesdays offers the opportunity to eat as much as you like for just £9.95.

Thai cuisine's subtlety and complexity is perfectly exemplified at Thai Pad Thai. Maz and his team truly deserve their success - long may it continue.
