The bistro at Brighton's Hotel du Vin offers an ambience of classic French elegance with a menu to match. You will instantly be charmed and soothed by the gentle candlelight, contented hum of enjoyment and, of course, the clinking of full wine glasses. The menu, like the ambience, oozes French panache, with influences from wider Europe and a distinct modern flavour. Concise and without unnecessary frill, the menu offers around five starters and five mains, with a selection of vegetarian choices and a collection of simple classics. The 'Simply du Vin' menu offers exceptional value for money at just £10.95 for a simple main course complemented by a glass of the sommelier's bin-end choice (either white or red) - offered from Monday to Saturday lunchtimes and Sunday to Friday dinner.

The menu alters with the changing seasons, and head chef Rob Carr provides further temptation with a selection of daily specials. His insistence on using only the best-quality ingredients shines through in every mouthful of starters such as smoked duck breast with celeriac, raisin, hazelnut and apple salad. Mains range from pan-fried hake with wilted spinach and a herb veloute, to simple classics like lamb rump with Dauphinois potato and rosemary jus. Non meat eaters will delight in creations like beetroot, caramelised apple and goat's cheese crostini salad with honey. If you should plump for the 'Simply du Vin' menu, expect perhaps smoked cod, poached egg and mustard butter sauce. Desserts offer more delectation and also change on a regular basis. The lunch menu is equally fine and includes some of the dishes from the evening menu, as well as informal meals like the HdV burger, made from naturally reared beef, with hand-cut chips and homemade tomato sauce. Wine at Hotel du Vin - as the name suggests - is given as much attention as the food, and the sommelier is always on hand to offer advice on the selection of Old and New World bottles.

What could possibly improve upon such a dining experience? Well, prices are sensible, and after a nightcap in the bar, you can always retire to one of the 49 divine bedrooms.
