Tucked away on an unassuming street in Kemptown, just minutes walk from the centre of Brighton, Blanch House is a hidden gem well worth seeking out. On arrival you are welcomed into a 70s inspired, award-winning cocktail bar with a menu that features a selection of classics as well as Blanch House's unique creations. With cocktails such as 'Duck Soup' and 'Strawberry Balsamic Mojito' on offer, you may find it difficult to drag yourself away, but be assured there are many more mouth-watering delights to come. The restaurant nestles in the back of the hotel - a light, clean contemporary space which features an ever-changing art exhibition from local artists. The service is pleasantly relaxed and friendly, immediately making you feel at ease. Freshly homemade bread is presented on arrival with a tempting choice of mixed grain, mustard and shallots, or orange and thyme - it's hard not to request one of each.

Starters are light and beautifully presented, with options including chilled cucumber soup served with salmon tartar, and the bramble-liqueur-cured salmon is a perfectly balanced summer dish. If you fancy something more traditional, try the fig and duck terrine, which has been given a modern twist with the addition of sweet goji berries. Main courses include many innovative creations, confirming that the head chefs here are not afraid to think outside the box - the pan-roasted black cod served in a light broth with Puy lentils, artichoke, sorrel, olives and sherry emulsion is an exciting example. The rabbit dish features local meat and is cooked three ways - roasted loin, poached leg and shoulder ravioli. Served with carrot purée and savoy cabbage, the rabbit is exceptionally succulent and tender. Ensure you save room for dessert, because they are original, light and positively irresistible. A perfect conclusion to your evening could be the cherry and rose parfait served with a cherry blossom tapioca, citrus sorbet and sugar tuile.
