Take a smattering of old kitchen tables dripping with retro charm and a handful of miscellaneous chairs; add some delightfully unique lampshades and furnishings, not forgetting the zest of modern design; mix well with fantastic staff, excellent menus and locate in the vibrant and trendy North Laine area of Brighton, and the result is the immensely pleasurable and satisfying Nia Brighton.

Nia has had its soul rejuvenated since proprietor Sheila Baker took over in August 2007. A new bar sits proudly in the dining room, displaying a shaker-style front that fits seamlessly alongside the assorted tables and chairs. The menus, which change to reflect the current season, have also been remoulded, and, wherever possible, all produce is now free range, organic and locally sourced. There is a sense of individuality here, which extends to the personal service offered to each and every guest. Nia also offers a range of coffees, milkshakes and smoothies, which are the talk of Brighton.

Nia presents a beautifully-crafted breakfast menu until 1pm, with such delights as smoked haddock with poached egg or, if your sweet tooth needs addressing, French toast with bananas and maple syrup should do the trick. The lunchtime menu, served from noon, offers good wholesome fare with a luxurious twist, from steak sandwiches to grilled red mullet or wild mushroom risotto. Children are also catered for, with favourites such as bangers and mash or fishcakes, which you can be assured will be of supreme quality.

From 6pm the à la carte menu comes into effect - a well-balanced and distinctive affair, there's sure to be something to pique your culinary interest. An impressive selection of wine is offered, and the knowledgeable staff will happily help to select the most complementary flavours for your meal.

The sensation of familiarity surrounds you the minute you set foot in Nia, the cheerful staff greeting you with the warmth of an old friend. Even the olive oil and balsamic vinegar is prepared with style in a crescent moon effect on your table. Expect dishes like goat's cheese, caramelised onion and cherry tomatoes on bruschetta, wholesome and satisfying, or perhaps fragrant and refreshing clams with garlic and parsley. Tuck into the likes of tender loin of venison, marinated in crushed juniper berries, or confit of duck with baked beetroot, beautifully balanced and robust. Desserts here are divine and an absolute must.

Attention to detail is apparent in every aspect of the Nia experience, from the decor to the attentive and proficient staff, and from the thoughtfully created menus to the beautifully presented food. If you do one thing in Brighton this year, visit Nia - you won't be disappointed. Modern European
