The Parsons Table
Located in the centre of Arundel in the former stables of the castle, The Parsons Table combines an ancient, salt-of-the-earth feel with stylish, modern decor in subtle shades of white, grey and dusky turquoise. Chef-owner Lee Parsons honed his culinary skills at Claridge’s Hotel and Le Manoir aux Quat’Saisons before moving to North America and running his own kitchens, as well as becoming a regular on Canadian television. His wife and business partner Liz, who runs the front of house, has extensive experience in hotel management and has won international awards for her work in catering.
The enticing menu at The Parsons Table reflects the diverse influences of Lee’s career while concentrating on seasonal dishes made from fresh local produce that is sourced from West Sussex wherever possible. Even the drinks are from Sussex, including locally made gin and vodka as well as local beer and sparkling wine. South Downs game terrine might open your meal in autumn, followed by braised beef cheeks with seasonal vegetables, or roasted cod with delicate crab risotto, and the experience should definitely be rounded off with one of Lee’s unmissable desserts.
