May Tonggrid grew up on a family farm in Prachinburi Province east of Bangkok where she helped prepare seven-course evening banquets for her three-generation family. Today that passion for food is the foundation for Chilli Banana's growing reputation. The authentic taste of May's delicately flavoured traditional Thai home cooking has built a strong following since the original award-winning restaurant opened in Wilmslow in 1996. It's from market gardeners in the Chao Phraya basin that the finest herbs and spices are still imported twice a week to be ground and blended by hand to re-create the intricate tastes of Thailand. Chilli Banana specialises in family recipes but goes beyond the home table to explore a range of dishes, from popular Bangkok street food through to the top-floor cuisine of the city's five-star skyscraper restaurants. Their exotically unfamiliar regional dishes are not adapted to suit Western tastes. They are the real thing, cooked and served with a passion for traditional home cooking - the way it's done in Thailand. Entry to Chilli Banana's stylish two-storey Wilmslow town centre restaurant, on the corner of Water Lane, is through an atrium of Thai lanterns into a dining room overlooking a state-of-the-art open kitchen. There are also private dining facilities for up to 60 people on the mezzanine floor. Around 3,000 handmade bricks, Thai furnishings, art and decorations were shipped 6,000 miles to guarantee a genuine Asian experience.
