Situated in Liverpool's theatre district, the cultural heart of the city, The London Carriage Works provides an elegant dining experience. The building, constructed during the 1860s in the style of a Venetian palazzo (or palace), was once the abode of coach and carriage builders - but these days it's home to a creator of exquisite food.

Liverpool food champion and chef Paul Askew heads up the kitchen, where only the best ingredients are used to create inspiring, intelligent dishes. The team are dedicated to sourcing produce from the North West's abundant natural larder - vegetables come from Claremont Farm on the Wirral, meat comes from nearby Callum Edge Butchers and sea bass is caught from Liverpool Bay. The chefs only cast their net further afield when searching out the likes of top-quality charcuterie, olives and olive oil from Europe and superior cheeses from around the UK.

To start I chose the pigeon breast and risotto - the meat was perfectly cooked and the whole dish packed with flavour. I went for the 'market fish of the day' to follow, and was thrilled with the wonderfully fresh halibut served in a creamy clam sauce. I'm convinced I would have been equally impressed had I chosen the thyme-scented sirloin of dry-aged fell-bred beef, or one of the delicious-sounding vegetarian options. To finish, the beautifully crafted hot Amedei chocolate fondant, served with white chocolate ice cream and a Cheshire apple, was a heavenly treat.

It is the small touches that make a meal at The London Carriage Works so enjoyable - a palate-refreshing amuse bouche between courses and knowledgeable staff who can recommend a wine to match each dish. An excellent prix fixe menu is also available, which concentrates on produce sourced within a 25-mile radius of the restaurant, and a private dining menu can be arranged for special occasions. Extensive breakfast and traditional afternoon tea menus are offered too. Because the team here are so passionate about using produce when it's at its best, the dishes on all menus change with the seasons - a reassuring and exciting prospect for those who, like me, have already decided to make it their new favourite haunt.
