Louis' reputation for providing diners with a first-class experience is in capable hands with Leo, whose background includes many years at Fisherman's Lodge and Close House Hotel. His intelligent approach to eating out seeks to blend the best aspects of fine dining with a relaxed, comfortable and modern ambience. The scene is set with immaculately presented tables and well-polished surroundings bathed in the glow of subtle lighting.

While the British Fayre menu offers the same dining experience at a very affordable price, choosing from the à la carte menu is a special delight. My plump, perfectly cooked scallop with black pudding, radish and watercress salad came elegantly presented on a chic black slate and tasted as good as it looked. My companion's pressed belly pork, beet and cauliflower purée also lived up to expectations. Chef Lee Bell's excellent sorbet gave us space both to reflect and to anticipate while enjoying our zesty Marisco Sauvignon Blanc.

Sumptuous aromas heralded the arrival of our main courses: fresh, delicate steamed sea bass, spring onion, ginger and sukiyaki sauce, and the more robust pork rack with mushroom-dusted tenderloin, sage-crushed potatoes and cider jus. The mouth-watering fragrance matched up to the succulent flavours in both dishes and the accompanying mixed vegetables (green beans, sugar snap peas, carrots and broccoli) were perfectly al dente and piping hot.

Our quietly attentive waiter afforded us all the time we needed to make our choice of dessert from the exceptionally creative menu. Each element on the plate was visually stunning and the flavours were beautifully balanced; the soft, comforting taste of the honey and walnut tart was perfectly offset by a crisp, sharp citrus sorbet served in a wafer-thin brandy basket. My companion's chocolate coffee cup with mocha ice cream and chocolate sauce was pronounced to be every bit as pleasing to the palate as it was to the eye, with its balance of sweet and bitter, crisp and creamy. Louis' delivers excellence in every element of the dining experience - we are already making plans for a return visit.
