The first thing that will strike you when you walk into the Dolphin Bar & Grill, besides the big, friendly smile on the face of your waiter, is the restaurant's impressive and unusual view. The quirky set-up means that diners are able to look down over the stylish swimming pool of the Dolphin complex.

The restaurant is both rustic and elegant; large wooden tables and country kitchen-style Mason jars surprisingly complement the glamorous pool view. A long and creative menu meant I was simply spoiled for choice, eventually opting for seasonal asparagus salad to start, while my companion chose the smoked garlic, pork, duck and chicken terrine. My main course was a wonderfully fresh and beautifully presented butternut squash and toasted pine nut cake; across the table it was all about the perfectly cooked 10oz t-bone steak. The following mango and ginger sorbet made for a refreshing dessert.

The Dolphin combines top restaurant food with the efficient yet laid-back service of a local bistro. The team here clearly care - not only about providing their customers with flawless service and exquisite food, but about their carbon footprint too. Wherever possible, the chefs use sustainable products and source their ingredients locally - some are even grown in the Dolphin Square garden.
