Showcasing the breadth of Britain’s culinary strengths, the menu focuses on seasonality, sustainability and traceability, thanks to close relationships with some of the best artisan producers from across the British Isles. Seasonal starters might include venison tartare from the Lake District and crab soup with a scallop macaroon, while the mains selection may feature a tempting array of meat, game, fish and shellfish dishes – the Cumbrian smoked loin of Herdwick lamb, the fillet of halibut with squash and ginger and the roast monkfish with squid ink and crab tagliatelle are among the highlights.
