Prism's brasserie and bar is truly breathtaking, with palatial proportions and original grand features remaining from its days as the main hall of the bank; these architectural features have been cleverly enhanced by subtle contemporary design. The long, slick bar dominates one side of the room and at night is illuminated by hundreds of tiny lights.
Head chef Daniel Sherlock creates a much-loved European menu offering a contemporary take on a wide range of classics - peruse the menu over a little plate of perfectly boiled quails' eggs with celery salt, or mini chorizo with aioli for dipping. Starters include lightly soused mackerel with beetroot, Jersey Royals and parsley, while main courses include such creations as roast rump of lamb with peas, broad beans and tomato fondue. Dessert brings delights like peanut parfait with praline mousse and fresh cherries, or strawberry whip with vanilla mascarpone and shortbread. Daniel's fine cooking is complemented by a well-balanced wine list.
The lower-ground-floor bar is situated in the atmospheric former bank vaults and offers a selection of contemporary cocktails, boutique distilled spirits and Champagnes. Served alongside this superior list of beverages you'll find a delicious selection of bar snacks and more substantial dishes, ranging from wild mushrooms on toast with a poached egg and creamy mustard sauce, to traditional Cumberland sausages and mash with gravy.
