Ametsa with Arzak Instruction
Ametsa is a shining Michelin-starred Basque restaurant housed in COMO The Halkin, one of London’s leading luxury hotels. Stylish and intimate, it combines world-class cuisine with attentive service and an eye-catching flair for presentation. The interior, with its wave-like ceiling made from 7000 glass jars filled with spices, lacquered walls and oak floor, echoes the impressive food to come.
Two glasses of Champagne Taittinger awoke our palates, and we were then presented with a platter of stunningly presented aperitivos. Bursting with colour and texture, these inventive bites ranged from delicate Scorpion fishcakes to fried prawn gyoza and crunchy black pudding balls, offset by a sweet, tangy marmalade. Next came a true highlight of the menu: scallops served with hemp seed crackers and a creamy parsley sauce. Tender and fluffy, with just a hint of crispiness, they truly melted in the mouth. Meanwhile, Egg On the Moon lived up to its intriguing name, presenting a velvety poached egg beneath a translucent red pepper skin.
The fish course – cod with chickpea painting – was simple and refreshing, while the succulent beef fillet was paired unusually but effectively with hot peach sauce. Finally, The Passion Of Chocolate combined whipped cream and luscious chocolate mousse with crunchy turmeric crackers to round off a thoroughly satisfying, and constantly surprising, dining experience.
