The Noke Thistle is blessed with two restaurants; The Oak & Avocado, which serves an extensive gastro menu; and The Noke, a fabulous fine dining restaurant. The entire hotel has recently undergone a major refurbishment, further improving on an already stunning venue. The Noke is exceptional, not just because of its food but also due to its exquisite decor, grand piano and the first-class service we encountered on our visit. It has recently been awarded an AA rosette, further proving itself as a source of high-quality food and service.

Both restaurants are open every day for lunch and dinner, with the exception of Sunday night in the Noke restaurant. Rotating menus on a seasonal basis, they also have different à la carte menus for daytime and evening service, and on Sundays offer a carvery. My fine dining experience began with a boudin of oak-smoked Scottish salmon with pea sorbet and a bacon and shallot dressing. From a further list of delights ranging from seared foie gras, white onion and thyme soup or Cornish crab meat salad, my guest opted for the latter, served with pea shoots and roasted cherry tomato vierge. Prices for these superb starters range between a reasonable £5.50 and £9. The sautéed and poached Casterbridge beef fillet was cooked to perfection, with fine beans and pancetta to complete the dish. The organic chicken breast was a perfectly-formed and tasty choice, served with a poached hen's egg, petit pois and baby onions, ideally accompanied by a fruity pinot grigio. Mains are excellent value, starting at £17. For dessert choose between something creamy, fruity and refreshing like the apple clafoutis and cinnamon ice cream or the even more indulgent Valrhona chocolate plate.

The Noke Thistle has been a welcome beacon for the weary traveller since Victorian times, and today it offers a huge 111 bedrooms and, as we discovered, excellent dining. Situated on the outskirts of historic St Albans, The Thistle boasts the perfect location for a perfect night out.
