The Three Horseshoes differs from other venues in that, while head chef and owner Richard Stokes does concern himself with the important matter of the provenance of his ingredients, he is also just as detail-oriented when it comes to promoting matters like ethical and sustainable fishing and farming practices. The Dorset-sourced shellfish, for example, come in live and stress-free, resulting in a fresher and superior-tasting product. When in season, some of Richard's vegetables are imported from Italy in order to lend the best, most authentic taste possible to his dishes inspired by that part of the world. You'll notice the difference when sampling dishes like zuppa di zucca (roast pumpkin squash soup with crostini, sage and a drizzle of olive oil). Everything is geared towards cooking with the best tasting ingredients of superior origin.

The menu is also influenced by Asia and the East, most obviously in a starter like the delicious tuna with crab custard, dashi, wasabi, radish and popped pork. For something more familiar, do try the tender roast Gressingham duck breast, complete with crispy skin and served with orange, turnips 'three ways' and hazelnuts or succulent confit pork belly with braised cheek and celeriac purée. Finish with buttermilk panna cotta accompanied by blood oranges, grappa and mint or violet ice cream with frozen chocolate crumbs, and leave having fully appreciated the quality of food that The Three Horseshoes can offer
