Freddie Churchyard was head chef of this restaurant some 20 years ago. Now, he and his sons own the restaurant and have revamped it into a stylish dining environment. Edison lamps light the room with a soft glow, and fresh fl owers, flickering tealights and pristine white tablecloths add to the relaxing atmosphere. Freddie and his eldest son, Shaun, share chef duties, while Anthony can be found front of house. The regularly changing menu always offers grills and burgers prepared on the prized Kopa charcoal- and wood-burning oven. Food miles are kept to a minimum as everything is sourced from close by. Salad ingredients are grown in nearby fields, fish are caught in local waters, and the pork, chicken and beef served in the restaurant all comes from outdoor-reared animals on farms just a short bicycle ride away. There is also a selection of award-winning beers and ales from Maldon's own microbrewery.

We enjoyed starters of tiger prawns cooked in fresh limes and green chillies. The mains of smoked belly of pork with a sweet honey glaze and the sticky ribs, sourced nearby from Wicks Farm, were beautifully tender. For dessert, we gobbled up a hot chocolate brownie with homemade persimmon and vanilla ice cream, and a rich crème brûlée that Shaun blow-torched at our table
