The beautiful Borde Hill Garden is home to Jeremy's Restaurant, where owners Jeremy and Vera Ashpool make full use of its wonderful location. The building itself houses a large dining room with exposed beams and a smaller bar area for pre-meal drinks, decorated in modern, tastefully muted colours that perfectly complement the older structure. The food is largely locally sourced, to the extent that even the herbs and edible flowers are grown in Borde Hill's own Victorian walled garden.

With starters such as partridge with Jerusalem artichoke, granola and crispy bacon, and a goat's cheese tart with butternut squash, garden grape gel and radicchio, our dinner got off to a start that heightened the anticipation for what was to come. A main of rump and braised silverside of Sussex Trenchmore Farm beef, creamy mashed potato, shallots and hazelnut was an inspired concoction of striking flavours, while rack and neck of Southdown lamb, herb gnocchi, red kale and beetroot brought together creative flair and fine cooking skills.

The attention to detail and adventurous spirit of the menu continued with the desserts, where Santiago almond cake with citrus Catalan crème brûlée ice cream was sharp, fresh and sweet in all the right ways, while the sticky toffee pudding with hot toffee sauce and vanilla ice cream presented a well-crafted example of a true British classic
