Set in Wyboston Lakes’ spa resort, The Waterfront is billed as the final stop on a day of rest and relaxation. For those not using the spa facilities, The Waterfront proves a serendipitous find for a relaxing meal with friends, successfully mixing a casual atmosphere with upscale restaurant quality.
Feeling daring, I began my meal with the rather unusual wood pigeon with duck leg bon-bons – an unexpected starter that mixed the rich game flavour of the pigeon with the sweetness of the accompanying beetroot and candied almond. My wife’s asparagus Royale was a visual spectacle, accompanied by beautiful quail’s egg and wild mushroom.
Already won over by the stunning starters, I continued with Goosnargh duck breast accompanied by roast shallots and blackberry vinaigrette. The perfectly cooked meat was exquisite. My wife chose the traditional pork belly, a tour de force of hearty flavour. This was accompanied by creamed cabbage, as rich as it was crisp.
We weren’t quite ready to end our dining experience, which was one of the best we’ve had all year, so we perused the tempting dessert menu. The decadent vanilla and raspberry panna cotta provided the perfect end to an incredible meal.
