9pm In the heart of north Nottinghamshire lies Laxton, an oasis of history with an age-old farming system dating back to medieval times. The village is home to just 100 households and a much-loved village inn, which receives visitors in droves. Quintessentially English, The Dovecote Inn is a warm cottage-style home from home with beamed ceilings, muted lighting and friendly, welcoming staff. You'll find fresh flowers on tables, good local ales on tap and an excellent wine list, painstakingly compiled by dedicated owners David and Linda.

So far, so traditional - but when your starters arrive it's a different story. Classic ingredients are all in attendance, including lamb reared in a small paddock on the premises and high-quality bangers from a butcher nearby, yet the way they're put together is imaginatively modern. I started with a rich, delicately spiced root vegetable soup followed by the lamb, which was bursting with flavour and exquisitely coupled with a minty garnish and buttered greens. Dessert was a sticky toffee pudding that was deep and treacly yet light and fluffy at the same time - a glorious alchemy that ensured I didn't spare a single crumb. With gourmet evenings, steak nights and plans for a high tea for the Queen's Diamond Jubilee, this inn is set to make a little history of its own. Follow The Dovecote on Facebook and Twitter.
