This superb Leicestershire venue comprises two very popular 70-cover restaurants. On our visit, charming staff led us into the gorgeous Spa Restaurant, a historic room with turquoise wood panelling, cream linen tablecloths and dark slate floors.

We were offered freshly baked olive bread as we took to our seats, and contentedly nibbled away as we waited for a sweet and peppery salad of chickpea, goat's cheese, roast beetroot, fresh rocket and roast potato. Home-cured whisky and honey salmon was also presented, resting on a bed of citrusy fennel and soft rye bread. The balance of sharp and sweet was wonderfully complemented by the subtle spice of dried coriander seeds. We then tasted some Cornish red mullet escabeche and the light halibut kedgeree sweetened with yoghurt and coriander rice. The moist Gressingham duck, accompanied by creamy celeriac mash and slow-cooked bean casserole, is also highly recommended, as is the traditional braised venison. Dishes on the regularly changing menus feature locally sourced produce and are clearly carefully considered. Later, Shearsby rhubarb and custard and the indulgent violet chocolate cake really hit the spot - the latter creamy, with fragrant and fruity violet crystals intensifying a rich, chocolatey pudding. Sinfully good.
