Using home-grown and –reared produce, the menus are guaranteed to excite and satisfy your palate. When we visited The Warren, we began with an appetiser of English truffles with black bean and cauliflower puree before moving onto their crispy goose egg starter, which was perfectly cooked, featuring a deliciously runny yolk and accompanied by a smooth pea puree, pancetta, and wild garlic. The main course, an exquisitely cooked venison loin in Port jus complemented by potato terrine, flavoursome watercress puree, confit Roscoff onions and girolles was a triumph, and the quirky dessert of rich treacle tart with brown bread ice cream was a revelation. To finish this unforgettable feast, we opted for coffee and elegant petits fours, and were so impressed that we were quickly planning our next trip here.

Although predominantly focusing on British food, the inventive menus also borrow from other cuisines to really bring their dishes and home-grown, seasonal produce to life. Expect plates such as poached oyster with wild bear chorizo, spinach gnocchi, braised lamb shoulder with lamb tortellini and belly of pork with chorizo spring roll and smoked pomme puree.

If you’re eager to experience fine dining at its very best, the restaurant offers a three-course set menu which is available for £23.95 (less for individual courses) every Wednesday and Thursday evening and Wednesdays until Saturdays at lunchtime. This exciting menu features starters such as twice-baked Brighton Blue soufflé with cauliflower sauce and toasted hazlenuts, mains like their Warren Sussex beef hot pot with savoy cabbage and toasted almonds, and desserts of orange-scented vanilla crème brulee with pomegranate sorbet.
