Sitting in a prime spot in the centre of Nailsworth is this newly opened gem. Owners Caroline and Greg have lovingly transformed what was once a bank into a haven for Mediterranean food fans. Having lived in Cyprus for 5 years, Caroline and Greg returned to the Cotswolds eager to share their love of foreign fare with their neighbours. They currently own a café and a pub, The Canteen and The Hog, and when the opportunity arose to add a wine bar and restaurant to their roster, they jumped at the chance.

The Vault’s interior is modern and sleek. Cosy sofas are tucked away behind the central bar, there’s an airy mezzanine level that’s the perfect place to dine, while visitors on sunny days can recline outside in the garden.

At the bar you’ll find an impressive selection of drinks. The range includes a small selection of favourites, and the helpful team is on hand to recommend something new and intriguing that is bound to impress. Expect to find the likes of Spanish sherry, Japanese sake, a whole host of gins and intriguing tonics, and beer and ale from local breweries.

The accompanying food menu is also worth sampling. Plates are slightly larger than the norm with tapas, so diners should arrive hungry. Our feast comprised gooey Iberian ham croquettes, flavoursome octopus Carpaccio marinated in paprika and olive oil and served atop a bed of thinly sliced potato, and black pudding wrapped in a pastry cone and drizzled with cane honey. With eyes bigger than our stomachs, we also ordered pork cheeks with sweet potato fries, the meat so tender it simply fell apart. Everything was beautifully presented, and a treat for the tastebuds.

Due to The Vault’s expected popularity, following its soft launch, booking are currently not being taken, so make sure you turn up early.
