Jess: Avo Toast
As a night owl, making breakfast on a weekday morning, at what feels like the crack of dawn, is quite the challenge. Anyone who knows me also knows I’m a rather big fan of avocados, so when I came across this simple recipe I knew I was onto a winner.
I believe that cooking is all about finding something that works for you, and I’ve adapted this recipe somewhat to suit my own tastes – adding a smattering of pomegranate seeds and taking away the greek yogurt – so don’t be afraid of doing the same.
- 1 medium egg
- ½ avocado, sliced or smashed
- 2 slices white poppy seed bloom
- 1 tablespoon pomegranate seeds
- ground black pepper, to flavour
Begin by toasting your bread. While toasting, poach your egg. If like me, you’re making this in the office, stick it in the microwave! Simply place in a mug half filled with water, cover and microwave for a minute. Evenly spread the avocado on the toast, before topping with the poached egg. Scatter pomegranate seeds on top and sprinkle with pepper to flavour.
Bekii: Morning Teas
A truly British Breakfast Week would not be complete without tea! I’m really not sure where I am or who I am in the morning until I’ve had my first cup. Green tea has been shown to lower cholesterol and though hotly debated, many have found that drinking green tea can aid weight loss.
