Winter has breathed its last (we hope) and as we wave farewell to shuddering rain and cold toes amidst our Bank Holiday bliss, we look forward to balmy days, to scorching festivals and picnics in the park. Brand me an optimist, but I say that calls for a drink.

What conjures the smell of cut grass, of fresh morning air, and all the delights of spring better than gin? The first G&T of the year, for me, always marks summer’s approach. But in the spirit of springtime frivolity (and the sudden urge to throw a garden party) we’ve decided to go one step further and shake (and stir) up some spring-inspired cocktails. After all, when it comes to gin, only the finest will do, so one of the longest reigning purveyors of British gin was right up our street. Greenall’s have been producing gin from a secret recipe for over 250 years and turns out they have a few cocktail recipes up their sleeve…

Gin Fizz

GIN FIZZ

Ingredients
100ml Greenhall’s Original London Dry Gin
50ml freshly-squeezed lemon juice
40ml sugar syrup (gomme)
Soda water

Shaken
Shake all the ingredients with ice and strain into an ice-filled tall glass, top up with soda water and garnish with a lemon slice and mint sprig.

Spring Collins

2 Spring Collins

Ingredients
35ml Greenall’s Original London Dry Gin
10ml elderflower cordial
20ml lemon juice
40ml cucumber juice
60ml cloudy apple juice

Stirred
Start with a glass filled with ice. Pour each ingredient in one after the other, then finish with the cloudy apple and stir.

The Greenall’s Spring Collins was created specially by the expert mixers at Cocktail Box  for the Cheltenham Festival.

Hedgerow Romance

Ingredients
50ml Greenall’s Wild Berry Gin
25ml lemon juice
15ml vanilla syrup
1 egg white
4 blackberries

Shaken
Pour all ingredients into together and give a short shake with ice. Pour liquid into one half of a Boston shaker and discard the ice. Dry shake to further emulsify, before pouring the lovely frothy liquid into a cocktail glass. Garnish with a blackberry.
