Chef Tom Sellers’ debut restaurant is to open next month on Tooley Street in London, and reservations are already being taken for his much-anticipated dining experience. Just 26 years old, Sellers has already worked for Tom Aikens at his eponymous Chelsea restaurant, Thomas Keller at The French Laundry and Per Se, Adam Byatt at Trinity and René Redzepi at Noma – all that remains to be seen is whether their Michelin magic will rub off on him.

Bookings are only being taken for April and May and the restaurant only has 42 covers available for both lunch and dinner. Tom’s cuisine – which features a choice between a six-course (£45) or ten-course (£65) menu – will include his signature bread and dripping, as well as dishes such as scallops with cucumber and dill ash; beef cheek, stout and cauliflower yeast; and Three Bears’ Porridge. Cocktails will include Tom’s Collins – comprising Sipsmith, zesty lime and fiery gingery beer – and the neighbouring Kernel Brewery will be providing a range of local craft ales.
